The good news is that a local bivalve, called Cape May Salts, is making a comeback after suffering a decline that began in the 1950s and lasted for 40 years. In 1997, Atlantic Capes Fisheries, in cooperation with Rutgers University, began cultivating selectively-bred, disease-resistant oysters in our local waters. The resulting Cape May Salt Oyster has been praised in the Philadelphia Inquirer, New York Times, and by the Slow Foods USA organization.
The oysters are described by devotees as small and round, “filling pearlescent cups” with a flavor that is, “delicately fruity, washed with a hint of seawater salt.” A squeeze of fresh lemon juice or a mignonette ( a sauce of vinegar, pepper, and herbs) are suggested accompaniments.
