|Fresh Strawberries & Strawberry Sauce|
Fresh, local berries are one of the joys of the Summer season, as is this simple recipe for making Strawberry Sauce. It uses only three ingredients and has an appealing flavor with a hint of tang from the fresh lemon juice and zest. Excellent on pound cake, ice cream, waffles, and so much more!
2 cups sugar (I used less because we’re cutting back on sugar)
1 large lemon, zested and juiced
3 cups strawberries, washed, hulled, & sliced
Combine the sugar, zest, and juice in a small saucepan and cook over low heat for about 10 minutes, stirring occasionally (until the sugar is dissolved). Add the berries and continue to cook for about 20 minutes more or until the strawberries release some juice and the mixture simmers. It will thicken or “gel” slightly – depending on the amount of sugar you use, for example.
Cool the sauce a bit and then pour into jars. Keep refrigerated or freeze for longer storage.
